Toward mid-August, their home was filled with a flurry of winter tomatoes. Are you ready for a wonderful recipe for that very fragrant tomato sauce of our childhood?

Here are the ingredients for our Guaranteed Tomato Sauce Recipe;

7 kg tomatoes (at least 4 kg almond tomatoes)
4-5 tablespoons of rock salt
1 teaspoon olive oil, 1 teaspoon sugar per jar (optional)

Wash the tomatoes well and cut them into quarters in a deep bowl. We fill our largest pot with as many chopped tomatoes as needed. Begin to boil, stirring occasionally with a wooden spoon. As our tomatoes soften and absorb the juice, we add them in batches until we run out of the remaining tomatoes in the container. When all the tomatoes are cooked, grind them for about 5 minutes with an immersion blender. Cook the puree for about 15 minutes over low heat. In the meantime, we take the foam that accumulates on it. For 7 kg of tomatoes, add 4-5 tablespoons of rock salt according to your taste and type of tomato and mix. Boil our puree again and pour into pre-sterilized jars. Makes about 6 large jars. Wipe the sauce smeared around the edge of the jar with a clean, dry cloth. At this stage, if desired, you can add a spoonful of sugar or olive oil to the jars. Then tightly close the lids. (We’re definitely not turning the jars upside down here, because we don’t want the seal in the lid that the hot mixture touches to dissolve into our puree.) Instead, we pasteurize our jars by placing them in a pot full of simmering water and simmering. about 10 minutes. Cool well in a shady place and store in a dry place all winter.
