Good morning everyone from the last week of August, which brought us autumn.
Saying goodbye to summer with its sea, sun, warmth, with what is, what is gone, what is left, who is leaving, we meet autumn with its beautiful colors, new impressions, plans, enthusiasm and decisions. In the middle of two seasons, how about treating yourself to a hearty delicious breakfast before heading out for all the new and fresh stuff? One star of this breakfast is you, and the other, if not blueberry puff pancakes?
Here are our materials:

2 eggs
1 teaspoon milk
2 teaspoons flour
1 pack of baking powder
1 pinch of salt
2 tablespoons (sugar or honey)

For the above:
1 cup blueberries
Agave or maple syrup

Separate the yolk and white of the eggs. Whisk the egg whites and salt in a bowl until they turn into snow. Whisk the rest of the ingredients in a separate bowl. Mix the two mixtures together with a spatula and slow movements. It is important that we do this process here before the snow melts so that our pancakes are plump and worthy of their name. We take the mixture and cook it until it spreads the size of a saucer with a ladle in our well-heated pan. When an eye becomes an eye, we turn it.
